Physicochemical properties: White crystal or crystalline powder, sweet and soluble in water. Density 1.1607, melting point 232-233℃ (blackened), 292℃ (decomposition) Almost insoluble in acetone and ether. 
Uses: In medicine, it can be used as a buffer for amino acid preparations, chlortetracycline and as a synthetic raw material for L-dopa, an anti-Parkinson's disease drug. In food, it can be used as an additive for condiments, creams and cheeses to extend its shelf life. In the case of feed, it is used as a pet feed additive. Used as a biochemical reagent and solvent in organic synthesis and biochemistry.
